Just for fun, here are four (healthier) yet delicious chocolate recipes to try from Teresa Cutter who is also known as ‘The Healthy Chef’.

1. Chocolate Macadamia Brownies

This is my fudge-style chocolate brownie that’s just perfect for when you want something chocolatey and moreish. Serve in small portions with green tea for some heavenly indulgence. Makes 25 bite sized serves.

Ingredients
250 g (1 cup) butter, 180g (1/2 cup) raw honey, 2 tsp vanilla extract, 100g (3/4 cup) cocoa powder, 4 organic eggs, 60g (1/2 cup) wholemeal spelt flour, 1/2 tsp sea salt, 65g (1/2 cup) salted roasted macadamia nuts

Method
1. Preheat the oven to 160 degrees Celsius fan-forced (320 degrees Fahrenheit)
2. Combine the butter, honey and vanilla in a small pot
3. Heat the pot over a gentle heat until butter is melted
4. Remove the pot from the heat and whisk in cocoa powder
5. Add the eggs and whisk the mixture until combined
6. Add the spelt flour and sea salt, then fold the nuts through the mixture
7. Spoon the brownie mixture into a lined 18 x 20cm (7 1/2 x 8 inches) baking tin.
8. Bake brownies for 25 – 30 minutes. Check after 25 minutes. They should be soft in the centre.
9. Remove from the oven and cool in the pan. For best results, set the brownies in the fridge overnight.
10. Top with Raw Chocolate Tahini (optional, recipe included on slide four)

2. Yoghurt Chocolate Mousse

Ever had chocolate for breakfast?! My favourite dessert that can be eaten for breakfast when I feel like something healthy and indulgent. Made from three ingredients, this mousse is full of antioxidants as well as probiotics for digestive health. Serves 2.

Ingredients
250g thick coconut yoghurt or Greek style yoghurt, 60g (1/2 cup) raw cacao powder, 2 tablespoons maple syrup or raw honey Toppings banana, roasted hazelnuts, cacao nibs, granola and berries

Method
1. Combine yoghurt, cacao and maple syrup into a mixing bowl.
2. Whisk using a small hand whisk for a minute or until the ingredients are combined
3. Divide between 2 serving glasses or bowls
4. Top with your choice of toppings

3. One Bowl Chocolate Cake

This guilt free chocolate cake is filled with all things wholesome and good. I’ve used almond meal in this recipe, which makes this cake gluten-free and deliciously moist. Makes 1 cake.

Ingredients
300g (3 cups) almond meal, 60g (1/2 cup) cocoa powder, 2 teaspoons gluten-free baking powder, 1 teaspoon ground cinnamon, 4 organic eggs, 2 teaspoons vanilla extract, 125 ml (1/2 cup) melted butter, 125 ml (1/2 cup) almond milk or your choice of milk, 4 tablespoons raw honey

Method
1. Preheat the oven to 160 degrees Celsius fan-forced (320 degrees Fahrenheit)
2. Combine almond meal, cocoa powder, baking powder and cinnamon into a large bowl.
3. Combine eggs, vanilla, melted butter, almond milk and honey into a separate bowl.
4. Pour the wet ingredients into the dry ingredients.
5. Mix until well combined.
6. Pour into 1 x 20 cm (8 inches) lined baking tin that has been generously buttered and dusted with cocoa powder.
7. Bake for 40 – 45 minutes or until cooked through
8. Remove from the oven and cool.
9. Frost top of the cake with your choice of frosting.

4. Raw Chocolate Tahini

If you love Nutella, you will adore this nut-free chocolate spread. Enjoy straight from the spoon, or spread over cakes, brownies or toasted banana bread. Makes 1 jar.

Ingredients
75g (1/4 cup) hulled tahini, 1 tablespoon cold-pressed coconut oil, 1 tablespoon organic maple syrup, 2 tablespoons raw cacao powder

Method
1. Combine tahini, coconut oil and maple syrup in a small bowl using a whisk until smooth and creamy.
2. Use as desired.
