Head Chef and partner of Gelato Messina, Donato Toce has become a pioneer of gelato, pastry and an innovator in his approach to food science. Beginning his journey in Melbourne as a chef in traditional Italian restaurants, learning the fine art of pasta and pizza making, he became a restaurateur in 2001 and in 2005 moved to Sydney to open an iconic pizzeria. In 2007, he was head chef at hatted Italian restaurant A Tavola for two years – transforming it to an iconic food landmark on Sydney’s map.

Since joining Gelato Messina in 2009 Donato, along with Nick Palumbo, has revolutionised the understanding of gelato, gelato cakes and mono-portions in Australia – encouraging a following of like-minded gelato innovators worldwide. Donato is head chef across the production facility of 50 chefs, 22 stores across Australia and a brand new store in Hong Kong.

In this role, he works with clients across the agribusiness and food value chain from paddock to plate, helping them to respond to emerging risks and opportunities, and deliver sustainable growth. As a Partner in KPMG’s Mid Market Advisory team, Peter works with fast-growing public and private companies to create value by ensuring that customers are at the centre of every business decision.

Krista Watkins is a leader in agricultural innovation and the co-founder and Managing Director of Natural Evolution, a company specialising in green bananas and other waste produce products. Krista is an advocate for innovation and disruption, and passionate about reinvigorating the Australian food manufacturing industry. Krista’s interest in reducing waste and finding uses for unsaleable produce led to the development of Natural Evolution in 2015. Recently Krista’s new startup business, Plantation Brew Co. was awarded a Gold Medal at the San Francisco World Spirits Competition for their Sweet Potato Vodka. Krysta was named the 2018 AgriFutures Rural Women’s Award National Winner.
